Not sure if you know but I’m one of those woodsy nutter types that go foraging n stuff. What’s even odder is that most people like this and want to get into it too – but don’t know what to do with the 500lbs of blackberries they picked!
So here’s a quick, easy fave of mine.
It’s warm, gooey, sweety, fruity, filling, comforting and cheap to make 😀
Chuck in an ovenproof dish:
50g Pudding rice
250 ml Apple juice
1/2 tsp Vanilla essence
2 tbsp Sugar or honey (manuka if you’re posh)
A fistfull of Blackberries
Bake until gooey and gorgeous (bout 30 minutes) at 220°c.
